Bright Kiwi Mango Parfait Recipe

  • 2 large, ripe mangoes: Look for mangoes that yield slightly to gentle pressure and have a sweet, fruity aroma at the stem. Their vibrant orange flesh provides a juicy, sweet base for the parfait.
  • 4 ripe kiwis: A ripe kiwi will be firm but give a little when squeezed. The kiwi’s bright green color and tiny black seeds add a stunning visual contrast, while its tangy flavor cuts through the sweetness of the mango.
  • 3 cups Greek yogurt (plain, full-fat or 2%): A thick yogurt like Greek yogurt is essential for creating distinct, stable layers. Its creamy texture and slightly tart flavor profile form the perfect canvas for the fruit. You can also use a dairy-free alternative like coconut or almond milk yogurt.
  • 1 cup granola: Choose your favorite granola for that all-important crunch. A simple oat and honey granola works wonderfully, but feel free to use one with nuts, seeds, or dried fruit for extra texture and flavor.
  • 24 tablespoons honey or maple syrup (optional): If your fruit is perfectly ripe, you may not need any extra sweetener. However, a drizzle of honey or maple syrup can be mixed into the yogurt to enhance its sweetness and complement the fruit.
  • Fresh mint leaves for garnish (optional): A few fresh mint leaves on top add a final touch of color and a hint of fresh, aromatic flavor that elevates the entire dish.

Instructions

  1. Prepare the Fruit: Begin by thoroughly washing your mangoes and kiwis. To prepare the mango, slice off the “cheeks” on either side of the large, flat pit in the center. Score the flesh of each cheek in a diamond pattern without cutting through the skin. Then, gently push the skin from underneath to pop the cubes outward, and slice them off into a bowl. For the remaining flesh around the pit, carefully peel and dice it. For the kiwis, slice off the top and bottom ends. Stand the kiwi on one of its flat ends and use a small, sharp knife to slice the peel off in strips from top to bottom. Once peeled, dice the kiwi into small, uniform cubes and place them in a separate bowl.
  2. Prepare the Yogurt: In a medium-sized bowl, place your Greek yogurt. If you prefer a sweeter parfait, now is the time to add the honey or maple syrup. Start with two tablespoons and stir it in thoroughly. Taste the yogurt and add more sweetener if desired, until it reaches your preferred level of sweetness. Stir until the yogurt is smooth and creamy.
  3. Set Up Your Assembly Station: To make layering easy and clean, set up an assembly station. You will need your serving glasses (tall, clear glasses or mason jars work best), your bowl of diced mango, your bowl of diced kiwi, your bowl of sweetened yogurt, and your bowl of granola. Having a long-handled spoon, like an iced tea spoon, can be very helpful for placing ingredients neatly at the bottom of the glass.
  4. Begin the First Layer: The foundation of your parfait is key. You can start with either fruit or granola, depending on your preference. For a visually striking start, place a layer of diced kiwi at the bottom of each glass. Use a spoon to spread it out evenly, covering the entire bottom surface. This creates a vibrant green base.
  5. Add the Yogurt Layer: Carefully spoon a layer of the prepared Greek yogurt over the kiwi. To keep the sides of the glass clean and create defined lines, try to place the yogurt in the center of the glass and then gently spread it outwards to the edges with the back of the spoon. Make this layer about as thick as your fruit layer.
  6. Add the Granola Layer: Sprinkle a layer of granola over the yogurt. Be generous enough to create a distinct crunchy layer, but not so thick that it overpowers the fruit. This layer provides a wonderful textural contrast to the soft fruit and creamy yogurt.
  7. Add the Mango Layer: Now, spoon a layer of the bright, diced mango over the granola. Just like with the kiwi, spread it evenly to the edges of the glass. The vibrant orange color will create a beautiful contrast against the white yogurt below it.
  8. Repeat the Layers: Continue layering in the same or a varied order until you reach the top of the glass. A common and visually appealing sequence is: Kiwi, Yogurt, Granola, Mango, Yogurt, Granola. End with a final layer of yogurt, leaving a little space at the top for garnish.
  9. Garnish and Serve: For the final flourish, artfully arrange a few pieces of leftover diced kiwi and mango on top of the final yogurt layer. Sprinkle a small amount of granola over the fruit. Place a single fresh mint leaf in the center.
  10. Chill (Optional but Recommended): For the best flavor and texture, cover the parfaits with plastic wrap and chill them in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together and ensures the parfait is refreshingly cool. Serve immediately after chilling to ensure the granola remains crunchy.
