- Roast the Vegetables to Perfection:Â Spread the butternut squash cubes, onion chunks, and whole garlic cloves in a single, even layer on the prepared baking sheet. Drizzle generously with the olive oil, and then sprinkle with the salt and black pepper. Use your hands to toss everything together, ensuring all the vegetable pieces are lightly coated. Roast in the preheated oven for 30-35 minutes, or until the squash is fork-tender and you see some nice caramelized, golden-brown edges.
