- 1/2 cup of unsalted butter, melted
For the Cheesecake Filling:

- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 4 large eggs
- 8 ounces of semi-sweet chocolate, melted and slightly cooled
For the Chocolate Ganache Topping:
- 1 cup of heavy cream
- 8 ounces of semi-sweet chocolate, finely chopped
Instructions
Creating a chocolate cheesecake involves several steps, each crucial to achieving the perfect texture and flavor. Follow these instructions carefully:
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs (or chocolate cookie crumbs) and sugar.
- Stir in the melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove from the oven and set aside to cool.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese with a mixer on medium speed until smooth and creamy.
- Add the sugar, vanilla extract, and salt, and continue beating until well combined.
- Add the eggs, one at a time, beating well after each addition.
- Gently fold in the melted chocolate, ensuring it is evenly distributed throughout the mixture.
- Pour the filling over the cooled crust, spreading it evenly with a spatula.
Step 3: Bake the Cheesecake
- Place the cheesecake in the oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
- Remove the cheesecake from the oven and let it cool completely at room temperature.
- Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
Step 4: Prepare the Chocolate Ganache
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chopped chocolate, stirring until the chocolate is completely melted and the mixture is smooth.
- Let the ganache cool slightly before pouring it over the chilled cheesecake.
- Spread the ganache evenly, allowing it to drip down the sides for a beautiful finish.
