  • Author: Sarah

Ingredients

Scale

Creating a chocolate cheesecake requires a selection of quality ingredients. Here is what you will need:

For the Crust:

  • 1 and 1/2 cups of graham cracker crumbs (or chocolate cookie crumbs for extra chocolate flavor)
  • 1/4 cup of granulated sugar
  • 1/2 cup of unsalted butter, melted

For the Cheesecake Filling:

  • 24 ounces (3 packages) of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 4 large eggs
  • 8 ounces of semi-sweet chocolate, melted and slightly cooled

For the Chocolate Ganache Topping:

  • 1 cup of heavy cream
  • 8 ounces of semi-sweet chocolate, finely chopped

Instructions

Creating a chocolate cheesecake involves several steps, each crucial to achieving the perfect texture and flavor. Follow these instructions carefully:

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs (or chocolate cookie crumbs) and sugar.
  3. Stir in the melted butter until the mixture resembles wet sand.
  4. Press the mixture firmly into the bottom of a 9-inch springform pan.
  5. Bake the crust for 10 minutes, then remove from the oven and set aside to cool.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese with a mixer on medium speed until smooth and creamy.
  2. Add the sugar, vanilla extract, and salt, and continue beating until well combined.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Gently fold in the melted chocolate, ensuring it is evenly distributed throughout the mixture.
  5. Pour the filling over the cooled crust, spreading it evenly with a spatula.

Step 3: Bake the Cheesecake

  1. Place the cheesecake in the oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  2. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
  3. Remove the cheesecake from the oven and let it cool completely at room temperature.
  4. Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.

Step 4: Prepare the Chocolate Ganache

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  2. Remove from heat and add the chopped chocolate, stirring until the chocolate is completely melted and the mixture is smooth.
  3. Let the ganache cool slightly before pouring it over the chilled cheesecake.
  4. Spread the ganache evenly, allowing it to drip down the sides for a beautiful finish.
