Scale
Creating a chocolate soufflé requires a delicate balance of ingredients, each contributing to its unique texture and flavor. Here is a list of what you’ll need:
- 100g of dark chocolate (70% cocoa)
- 4 large eggs, separated
- 50g of granulated sugar
- 30g of unsalted butter, plus extra for greasing
- 1 tablespoon of all-purpose flour
- 1 teaspoon of vanilla extract
- A pinch of salt
- Powdered sugar, for dusting (optional)
Instructions
Making a chocolate soufflé might seem intimidating at first, but by following these detailed steps, you can achieve a perfect rise and a molten center:
Step 1: Prepare the Oven and Ramekins
- Preheat your oven to 375°F (190°C).
- Grease four ramekins (6-ounce size) with butter. Ensure they are thoroughly coated to help the soufflé rise smoothly.
- Dust the inside of the ramekins with sugar, tapping out any excess. This creates a crust that helps the soufflé climb as it bakes.
Step 2: Melt the Chocolate
- Chop the dark chocolate into small pieces for even melting.
- In a heatproof bowl, melt the chocolate and butter together over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat and set aside to cool slightly.
Step 3: Prepare the Egg Mixture
- Separate the eggs, placing the yolks in one bowl and the whites in another.
- Add the flour, vanilla extract, and a pinch of salt to the egg yolks. Mix until well combined.
- Fold the cooled chocolate mixture into the egg yolk mixture until smooth.
Step 4: Beat the Egg Whites
- Using an electric mixer, beat the egg whites until soft peaks form.
- Gradually add the granulated sugar while continuing to beat until the whites form stiff, glossy peaks.
Step 5: Combine and Bake
- Gently fold a third of the whipped egg whites into the chocolate mixture to lighten it. Be careful not to deflate the mixture.
- Fold in the remaining egg whites until fully incorporated, ensuring the mixture is light and airy.
- Divide the mixture evenly among the prepared ramekins.
- Place the ramekins on a baking tray and bake for about 12-15 minutes until the soufflés have risen and have a slight wobble in the center.
