Making a chocolate soufflé might seem intimidating at first, but by following these detailed steps, you can achieve a perfect rise and a molten center:

Step 1: Prepare the Oven and Ramekins

  1. Preheat your oven to 375°F (190°C).
  2. Grease four ramekins (6-ounce size) with butter. Ensure they are thoroughly coated to help the soufflé rise smoothly.
  3. Dust the inside of the ramekins with sugar, tapping out any excess. This creates a crust that helps the soufflé climb as it bakes.

Step 2: Melt the Chocolate

  1. Chop the dark chocolate into small pieces for even melting.
  2. In a heatproof bowl, melt the chocolate and butter together over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat and set aside to cool slightly.

Step 3: Prepare the Egg Mixture

  1. Separate the eggs, placing the yolks in one bowl and the whites in another.
