Cinnamon Roll French Toast Bites

Ingredients

  • Challah Bread (or Brioche): 1 loaf, sliced into 1-inch thick pieces. Challah and Brioche are ideal for French toast because of their rich, eggy texture that soaks up the batter beautifully without becoming soggy. Their slightly sweet flavor also complements the cinnamon roll filling perfectly.
  • Eggs: 6 large. Eggs are the foundation of our French toast batter, providing richness, structure, and binding the ingredients together. They create that classic custardy interior that makes French toast so delightful.
  • Milk: 1 cup. Milk adds moisture and thins out the egg mixture, creating the perfect consistency for soaking the bread. You can use whole milk for extra richness, or 2% or skim milk for a lighter option.
  • Heavy Cream: 1/4 cup. Heavy cream elevates the French toast batter, adding a luxurious richness and a velvety texture. It contributes to a more decadent and flavorful final product.
  • Granulated Sugar: 2 tablespoons. Sugar sweetens the French toast batter just enough to balance the savory elements and enhance the overall flavor profile. It also helps with browning during cooking.
  • Vanilla Extract: 1 teaspoon. Vanilla extract adds a warm, aromatic depth to the batter, enhancing the sweetness and complementing the cinnamon and other flavors. Use pure vanilla extract for the best flavor.
  • Ground Cinnamon: 1 teaspoon. Cinnamon is a key flavor component, bringing warmth and that classic cinnamon roll taste to the French toast. It infuses the batter with its signature spicy-sweet notes.
  • Salt: 1/4 teaspoon. A pinch of salt balances the sweetness and enhances all the other flavors in the batter. It’s crucial for preventing the French toast from tasting flat or overly sweet.

For the Cinnamon Roll Filling:

  • Unsalted Butter: 1/4 cup, softened. Softened butter is essential for creating a smooth, spreadable cinnamon roll filling. It provides richness and helps the cinnamon and sugar adhere to the bread.
  • Brown Sugar: 1/4 cup, packed. Brown sugar adds a molasses-like depth of flavor and sweetness that is characteristic of cinnamon rolls. Its moisture content also helps create a gooey filling.
  • Ground Cinnamon: 2 teaspoons. More cinnamon for the filling! This intensifies the cinnamon flavor and creates that signature cinnamon swirl in each bite.

For the Cream Cheese Glaze (Optional, but Highly Recommended):

  • Cream Cheese: 4 ounces, softened. Softened cream cheese is the base of our glaze, providing tanginess, richness, and a smooth, creamy texture. It adds a delightful contrast to the sweetness of the French toast.
  • Powdered Sugar: 1 cup. Powdered sugar sweetens the glaze and provides structure, helping it thicken to the perfect drizzling consistency.
  • Milk: 2-3 tablespoons. Milk is used to adjust the consistency of the glaze. Start with 2 tablespoons and add more gradually until you reach your desired drizzling texture.
  • Vanilla Extract: 1/2 teaspoon. A touch of vanilla in the glaze enhances the overall flavor profile and complements the cream cheese and cinnamon.

Instructions

  1. Prepare the Cinnamon Roll Filling: In a small bowl, combine the softened butter, brown sugar, and ground cinnamon. Mix until well combined and creamy. This mixture will be the heart of our cinnamon roll flavor. Ensure the butter is truly softened so it blends smoothly with the sugar and cinnamon, creating a cohesive and spreadable paste.
  2. Prepare the French Toast Batter: In a shallow dish or baking pan (large enough to dip bread slices), whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt. Whisk thoroughly until all ingredients are well incorporated and the mixture is smooth and slightly frothy. This ensures even flavor distribution and creates a light and airy batter for dipping.
  3. Assemble the Cinnamon Roll French Toast Bites: Take a slice of challah or brioche bread. Spread a generous layer of the cinnamon roll filling evenly over one side of the bread slice. Place another slice of bread on top, creating a sandwich. Gently press down to seal the edges slightly. This creates our cinnamon roll “sandwich” which we will then transform into bites.
  4. Cut into Bites: Using a sharp knife, cut each sandwich into 4 equal squares or rectangles, depending on your preference. These will be our French toast bites. Cutting them into bite-sized pieces makes them easier to cook evenly and perfect for dipping and serving.
  5. Soak in Batter: Dip each cinnamon roll bite into the prepared French toast batter, ensuring all sides are coated. Allow the bread to soak for about 15-20 seconds per side, or until it has absorbed a good amount of batter but is not overly saturated. Soaking allows the bread to become infused with the custardy batter, creating that signature French toast texture. Don’t soak for too long, or the bites might become too soggy.
  6. Cook the French Toast Bites: Heat a lightly oiled griddle or large skillet over medium heat. Once hot, place the soaked French toast bites onto the hot griddle in a single layer, leaving some space between each bite. Cook for about 2-3 minutes per side, or until golden brown and cooked through. The cinnamon sugar filling might caramelize slightly, which is perfectly fine and adds to the flavor. Adjust heat as needed to prevent burning.
  7. Prepare the Cream Cheese Glaze (While Cooking): While the French toast bites are cooking, prepare the cream cheese glaze if desired. In a medium bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar, mixing until combined. Add milk, one tablespoon at a time, until you reach your desired drizzling consistency. Stir in the vanilla extract. If you want a thicker glaze, use less milk; for a thinner glaze, add a bit more milk.
  8. Serve and Glaze: Once the French toast bites are golden brown and cooked through, remove them from the griddle and place them on a serving platter.
