- 4 red onions, thinly sliced
- 4 tablespoons butter
- 4–6 slices hearty white bread
- 3 cups shredded cheese (Gruyere or your choice)

- 2 tablespoons all-purpose flour
- 1/3 cup white cooking wine (or vegetable broth)
- 1 can beef or vegetable broth (14.5 oz)

Caramelize Onions
- Melt Butter: In a large pot, melt 4 tablespoons of butter over medium heat.
- Cook Onions: Add the sliced onions and sugar, stirring to coat well. Cook for about 35 minutes, stirring occasionally until they are golden brown.
- Season: Season with a pinch of salt and transfer the caramelized onions to a bowl.
Make Dipping Broth
- Melt Butter: In the same pot, melt 2 tablespoons of butter.
- Make Roux: Whisk in the flour until it forms a smooth paste.
- Add Liquids and Seasoning: Add thyme, white cooking wine (or vegetable broth), beef or vegetable broth, and pepper. Stir well.
- Thicken: Heat for 3-5 minutes until the broth is slightly thickened. Pour into a bowl and set aside.
Assemble Grilled Cheese
- Prepare Bread: Butter one side of each slice of bread.
- Toast Bread: In a pan over medium heat, place the slices butter-side down. Once toasted, flip them.
- Add Fillings: On one slice, add a generous amount of cheese and caramelized onions, then top with another slice of bread.
- Cook: Cook until the cheese melts and both sides are golden brown.
