The secret to a perfect tofu scramble with a firm, crumbly texture rather than a soggy, watery mess is to remove as much water as possible from the tofu block. Start by draining the water from the tofu package. Place the block of tofu on a plate lined with several paper towels or a clean kitchen towel. Place another layer of paper towels on top of the tofu, followed by something heavy, like a cast-iron skillet, a few cookbooks, or a tofu press if you have one. Let the tofu press for at least 15-20 minutes. This step is crucial; it allows the tofu to absorb the flavors of the spices and brown nicely in the pan. Once pressed, unwrap the tofu and place it in a medium-sized bowl. Using your hands or a fork, crumble the tofu into bite-sized pieces, varying the size for a more interesting, authentic texture. Set aside.

Step 2: Build the Savory Flavor Base

Place a large non-stick skillet or a well-seasoned cast-iron pan over medium heat. Add the olive oil and let it warm up for a moment. Add the chopped yellow onion and sauté for 4-5 minutes, stirring occasionally, until it becomes soft, translucent, and slightly sweet. This process of sweating the onion is the first layer of flavor. Next, add the minced garlic and diced red bell pepper to the skillet. Continue to cook for another 2-3 minutes, until the garlic is fragrant (be careful not to let it burn) and the bell pepper begins to soften. Finally, add the sliced cremini mushrooms. Step 4: Combine and Finish

Pour the soy sauce (or tamari) and nutritional yeast over the tofu. Stir to combine, ensuring every crumble is coated in that cheesy, savory goodness. This is where the signature flavor of the scramble truly comes to life. Pour in the unsweetened almond milk to add a touch of creaminess and deglaze the pan, scraping up any delicious browned bits from the bottom of the skillet.

Finally, add the fresh spinach to the pan. It will look like a lot at first, but it will wilt down considerably. Gently fold the spinach into the scramble until it has just wilted, which should only take 1-2 minutes.
